Farmer's Rustic Tomato Soup (vegan)

This is a fabulous rustic tomato soup! Similar to our Pappa al Pomodoro, it's thick with small chunks of ripe tomatoes and toasted pieces of bread, olive oil, garlic, basil, and various other fresh ingredients, The fresh, rich tomato flavor is enhanced by the onions that cook down with them, and satisfies on so many levels! It's vegan on its own, or serve alongside grilled cheese for a little comfort food. It pairs very nicely with a fresh green salad as well! If you like a slightly "chunkier" texture, you will LOVE this soup!
